Not if the form asks the questions you would have asked anyway. Most customers prefer it, because they can order at eleven at night without feeling they are bothering you.

What about customers who only use Instagram?

They still message you, and that is fine. The point is that the people who want to order at midnight without a conversation now can, and they are the orders you were quietly losing.

Do I need to take payment online?

A deposit is usually enough for made-to-order work. It filters out the enquiries that were never going to happen and protects you against a cancellation the day before.
